Unlike others, the virgin extra olive oil is the highest quality olive oil which we can find in the market.  It is pure olive juice, the liquid gold.  It is obtained from the best preserved olives and directly picked from the olive tree, using only mechanical procedures.  The olive juice is extracted using a cold mechanical centrifuge system, without any chemical agent intervening.

The virgin extra olive oil cannot exceed the 0.8 acidity, in order to preserve the original taste and smell, without flaws.  All our olive oils have a 0.1 acidity degree.
