We carry out the harvesting tasks when the olives are at their optimal ripening point, therefore enjoying its virtues to the most.  We pick only olives which are in perfect conditions.  Moreover, in order to achieve an extra quality, we carry out the crushing processes only hours after harvesting, using only mechanical procedures: cold extraction, with no chemical processes or temperature alterations whatsoever.

Finally, some olive oil samples are sent to an accredited laboratory in order to determine its quality.  Once the quality has been confirmed, the olive oil is bottled and ready to serve at your dining table.

All our olive oils are 100% olive juice, a maximum quality olive oil with a 0.1 acidity degree.
